  • With a smooth, unmarked surface of black cast iron, our Sukiyaki pan is a hefty kitchen tool. Cast in the Oshu city Mizusawa, pans like these have a legacy that spans more than 900 years, and are an important part of the Hiraizumi culture. Passed down over generations, the expertize of this Japanese city is unrivaled.

Two spiraled handles fit neatly into slots on other side of the pan, letting the chef easily pick up and move the pan. These handles can be quickly removed when cooking, so as not to intrude or get in the way.

Cast iron pans have many benefits over stainless steel. The material holds on to heat, spreading it out across the entire pan, lending a very stable heat transmission to ingredients. That is why Sukiyaki, or the Japanese dish usually consisting of slowly simmered sliced beef and vegetables, requires just such a pan.

    Tips for use:

    • Before first use, season pan with vegetable oil
    • During use, remove handles. Otherwise, they can become hot and dangerous.
    • Do not use in microwave.
    • Do not use to fry food in large amounts of oil, and do not overfill pan.
    • Cast iron can rust, so make sure to wash your pan with a scourer after use, and then dry your pan thoroughly.
    • Watch out! Iron is heavy and brittle, and dropping this pan can cause damage to your pan, your floor, or your feet. Use caution when moving a hot pan.
