With a smooth, unmarked surface of black cast iron, our Sukiyaki pan is a hefty kitchen tool. Cast in the Oshu city Mizusawa, pans like these have a legacy that spans more than 900 years, and are an important part of the Hiraizumi culture. Passed down over generations, the expertize of this Japanese city is unrivaled.
Two spiraled handles fit neatly into slots on other side of the pan, letting the chef easily pick up and move the pan. These handles can be quickly removed when cooking, so as not to intrude or get in the way.
Cast iron pans have many benefits over stainless steel. The material holds on to heat, spreading it out across the entire pan, lending a very stable heat transmission to ingredients. That is why Sukiyaki, or the Japanese dish usually consisting of slowly simmered sliced beef and vegetables, requires just such a pan.
